Butterscotch Banana Bread

Tender and moist banana bread packed with chocolate chips, butterscotch, and walnuts for a little crunch.
Ingredients
- 3 over- ripe bananas, mashed
- 1/2 C butter (1 stick), melted
- 1 C brown sugar
- 1/4 C white sugar
- 2 eggs
- 2 tsp vanilla extract
- 2 C flour
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tbsp sour cream
- 1/2 C butterscotch chips
- 1/2 C chocolate chips
- 1/4 walnuts (optional)
Instructions
- Preheat the oven to 350 degrees. Line a loaf pan with parchment paper or coat with non-stick spray.
- Combine bananas, melted butter, brown sugar, and white sugar in a large bowl.
- Add the vanilla extract and eggs one at a time. Set aside.
- In a separate bowl, stir together the dry ingredients: flour, salt, and baking soda.
- Stir the dry ingredients into the wet. Add the sour cream.
- Gently fold in the chocolate chips, butterscotch chips, and walnuts.
- Pour into loaf pan.
- Bake at 350 degrees for 50 minutes or until a toothpick is inserted and comes out clean.
Now, if you aren’t feeling adventurous, you could alway nix the butterscotch chips and/or the walnuts and your still left with an amazing loaf of banana bread!
